Instructions:
Chicken marinade: in a large bowl combine the chicken marinade ingredients all together and mix well.
Add the chicken cubes and toss well to coat, cover and refrigerate at least 2 hours.
Thread the marinated chicken cubes and bell pepper into the bamboo skewers.
Place the skewers on grilling pan and bake in a preheated oven at 200 degrees at the middle rack for 20-25 minutes then move up to the upper level for 15 minutes until lightly browned.
Place the chicken tikka skewers on a big serving plate. Garnish with fresh parsley and serve with seasonal salad.
